The market, which is presumably made up of knowledgeable buyers, establishes a fair price. If a seller sets too low a price, the item will be snapped up quickly. If the price is set too high, no sale. Price estimates at auction are set by knowledge of what the same or very similar steins have sold for recently, then modified for any special factors like condition or unusual features, whether desirable or undesirable. Even then, the knowledgeable bidders who actually participate in the auction will determine selling price.
