The German brewers are a conservative lot and went back to using the Brewer's Star when the Nazi's were past; but, it would have been insanely dangerous to risk being mistaken for a Jew or Jewish sympathizer while they were in power. You couldn't use the star in the Islamic world today either; but, they don't drink beer. The better of the suggested connections are: That it was a Jewish protective amulet perhaps based on the Kaballah and that the brewers adopted it, or, that it was a local Christian Saint's symbol used as a protective amulet against fire and the Jews adopted it, or, the Jews used it as they do today as a symbol for Kosher and purity of food and the brewers adopted it, or, that Jewish merchants traded in beer and used it as a symbol of quality and the brewers adopted it. Also, there is a ton of silliness around about what the star stands for - this point for that and this angle for the other - for both the Star of David and the Brewer's Star; but, all of it sounds like rationalization long after the fact.
